Dried dates

The origin of dates (Phoenix dactylifera) – the midland of West, which is situated near valleys of Euphrates and Nile, there dates are grown already for 4000 years. In the past dates were the symbol of an abundance and fertility. In Asia and Africa dates were one of the basic components of the ration for native population. In times the wild sorts of date-palms have disappeared. Nowadays the biggest plantations are located in Morocco and India. Dates or fruits of the date-palms are widespread foodstuff and are highly accessible as dried fruits. For most of the people dates primary are delicacy, but in the hot countries due to the high calorie-value they deserved the name “bread of desert”.

The colour of the fruit varies from almost dark to light – yellow. There are even greyly - pale blue dates. Moreover, dates are the sweetest from all fruits. From the juice of dates people get sugar, from which afterwards they do excellent ferment for the pastry. Moreover, the fruits are irreplaceable in the production of confectionery and in wine-making production.

Dates are gathered when they are yellow or red, that depends on the sort of fruits. Brown colour dates get when they are dried on the sun in the specially located places. After gathering harvest, fruits are sun-dried, then they are washed, people take out pits of the fruits (manually), sort them out and pack.

Dates as a source of energy exceed all other dried fruits. In the fruit that are sold in the dried way there is high contain of sugar, oil, proteins, cellulose and microelements. They contain high value of B5 vitamin, which raise efficiency and strengthen concentration of attention. Moreover, dates have such substances that are similar to the aspirin structure. In the case of regular usage, dates preserve human vision and hearing from getting worst. They contain lot of iron, phosphorus, mineral salts and all A and B group vitamins. Dates contain a lot of potassium and that is why they are recommended in case of cardiovascular illness.
